If you want to delete an old shipping method, you cannot if there is an open order using that method, even if it was delivered months ago and feedback left. Obviously you can disable the shipping method, change the name if it conflicts with another name, set the minimum order value for that shipping method to 9999 if it conflicts with a change in the store minimum order value, but all that is a faff just because someone hasn't marked an order as complete.
