I think there is still value in providing bag count. It's probably not realistic to have variants based on production date and location, so, in cases where multiple accurate bag counts exist, a number range with a disclaimer about varying bag count could be used instead of a fixed number. Some possible examples of value display: "26 bags, numbered 1-26" "4 bags, unnumbered" "4-5 bags, unnumbered" I was bought an old rare set as a gift and the gifter went through quite some hoops to research bag count since the seller did not know the set well enough to confirm it was accurate; only provide the actual bag count from the box. Having this information documented would be helpful even if the helpfulness varies by age of set. Agreed, easier, more realistic, and still useful info! About "cataloging" each bag, I'm sure another website - or rebrickable or like - could try to get this information (ideally with a picture of each bag!), but it'd be a HUGE implementation here and 95% of people wouldn't care.
