could a note be added to the figure that it has been found with both types. I
know usually it has to be from a sealed set but I wasn't sure if since it
was an exclusive part a note could be added.

Yes, it has been done this way multiple times when there is only one set or minifigure
where the head could come from. (I moved this thread to the inventory side.)

You can also submit a request to add the alternate head to the set inventory
as an alternate part with the next available match ID.
