Is there a setting that I cannot find to give a possibly more normal calculation
of the percentage off for a whole category you see in the inventory section of
a store?

Currently it reports the average percentage off of each lot, irrespective of
price and number of items in the lot. Is it possible to flick a setting somewhere
and get it to report the value of (total original - total current) / total original
x 100% ?

For example,

2 items in one lot at £25, with 20% off.
1 item in another lot at £1.
1 item in another lot at £1.

That inventory price was £52, and is now £42.

I would say that whole category has 19.2% off (or 19% if rounding). Whereas BL
reports it as just 7% off using (20%+0%+0%)/3. The percentage is a bit misleading
especially if you have lots of low value, small qty lots not on sale.
